15-Minute Veggie Stir-Fry



Ingredients:

1 cup broccoli florets

1 bell pepper, sliced

1 carrot, thinly sliced

1 small onion, chopped

1 cup snap peas

1 tbsp olive oil

2 tbsp low-sodium soy sauce

1 tsp minced garlic

Optional: red pepper flakes for spice

Instructions:

Heat olive oil in a large pan over medium-high heat.

Add garlic and onion; sauté for 2 minutes.

Toss in broccoli, bell pepper, carrot, and snap peas. Stir-fry for 7-8 minutes until veggies are tender but crisp.

Add soy sauce and red pepper flakes; stir well and cook for another minute.

Serve immediately, alone or over a small portion of brown rice or quinoa.

Calories: Approx. 180 per serving (without rice/quinoa)
