Chickpea & Cucumber Salad
Ingredients:
1 can (15 oz) chickpeas, drained and rinsed
1 cucumber, diced
1 small red onion, finely chopped
Juice of 1 lemon
1 tbsp olive oil
Salt, pepper, and fresh parsley to taste
Instructions:
In a bowl, combine chickpeas, cucumber, and onion.
Drizzle with olive oil and lemon juice.
Toss well, season with salt and pepper.
Garnish with fresh parsley.
