Vegan Chickpea Stir Fry

Calories per meal: ~350
Macros: High fiber, plant protein, low fat

Ingredients (4 servings):

  • 2 cups cooked brown rice
  • 2 cups cooked chickpeas
  • 1.5 cups mixed veggies (bell peppers, broccoli, carrots)
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • Garlic, ginger to taste

Instructions:

  1. Heat sesame oil in a pan, sauté garlic and ginger.
  2. Add chickpeas and veggies, stir-fry for 5–7 minutes.
  3. Stir in soy sauce.
  4. Serve over brown rice.
