Vegan Chickpea Stir Fry
Calories per meal: ~350
Macros: High fiber, plant protein, low fat
Ingredients (4 servings):
- 2 cups cooked brown rice
- 2 cups cooked chickpeas
- 1.5 cups mixed veggies (bell peppers, broccoli, carrots)
- 2 tbsp low-sodium soy sauce
- 1 tsp sesame oil
- Garlic, ginger to taste
Instructions:
- Heat sesame oil in a pan, sauté garlic and ginger.
- Add chickpeas and veggies, stir-fry for 5–7 minutes.
- Stir in soy sauce.
- Serve over brown rice.
